Salad with Pita Croutons, Lima Bean Falafels and Tahini Dressing

Lima Bean FalafelsTo the left is a picture of lima bean falafels that we ate with a salad of lettuce, cucumbers, yellow bell peppers, tomatoes and whole wheat pita croutons. We topped it all off with a simple tahini dressing. For the pita croutons, I baked chopped whole wheat pita bread that I sprayed with oil. Of course you can stuff the falafel right into a whole pita, and we plan to do that with leftovers sometime this weekend.

Lima Bean Falafels

2 cups frozen lima beans

1/4 cup roughly chopped chives

small handful of cilantro leaves

large handful of parsley leaves

1/2 teaspoon ground cumin

1 garlic clove, roughly chopped

salt and pepper, to taste

1 tablespoon spelt flour

Cook lima beans in boiling water for about 5 minutes. Drain and run under cold water to stop the cooking. In a food processor, combine all ingredients, except spelt flour. Process to a finely chopped consistency. Adjust seasoning, if necessary. Transfer mixture to a bowl and stir in 1 tablespoon of spelt flour. Form patties and saute in an oiled skillet until browned on both sides.

Yields approximately 12 2-inch patties.

Tahini Dressing

2 tablespoons tahini

2 tablespoon lemon juice

2 tablespoon hot water

1/8 teaspoon ground cumin

salt and pepper, to taste

Whisk ingredients together, adding more water if a thinner consistency is desired.

I have edited the original post on June 1, 07. In the Tahini Dressing recipe I originally typed in "1/8 pinch ground cumin". That should have read 1/8 "teaspoon" ground cumin. smilies/wink.gif

I made these last night - delicious and super easy. Mine weren't very falafel like as I used rosemary and chilli paste and we had them with stir-fried greens.

I'm having the leftovers for lunch today - in lavash bread with avocado and salad.

Thanks for this great recipe, I think I'll be making these a lot.
