Lentil Shepherd's Pie with Chive Mashed Potatoes and Green Beans

Lentil Shepherd's Pie with Chive Mashed PotatoesThis delicious, comforting meal is a favorite of ours and also quite easy to prepare.

For the Chive Mashed Potatoes: I simply boiled whole nugget potatoes, drained, then roughly mashed with soy milk, chives, salt and pepper and drizzled in a little olive oil. Earth Balance margarine is great in mashed potatoes, but I'm sticking with the olive oil since I have found I like the margarine a little too much and tend to go overboard with it. There's no right or wrong way to prepare mashed potatoes so use any type of potatoes and flavorings you like.

 

Lentil Shepherd's Pie

This recipe will yield approximately 6 cups of lentil filling. 

2-3 teaspoon olive oil

1 large onion, chopped
1-2 celery stalks, chopped

3 cloves garlic, minced

1/4 teaspoon dried thyme leaves

1/4 teaspoon dried savory leaves

1 cup dry brown lentils, sorted and rinsed

1 liter veggie broth

1 teaspoon Organic Gourmet Wild Mushroom Seasoning (may substitute with a tiny bit of Marmite)

2 carrots, diced (about 1 cup)

1 tablespoon flour mixed with about 1/4 cup water

1 cup peas

mashed potatoes, for topping

Heat oil in a pot (about 3 liter capacity) over medium heat. Saute onions and celery until softened then add garlic and saute another minute. Add herbs, lentils, broth and Mushroom Seasoning. Simmer 15-20 minutes, stirring occasionally then add carrots and cook another 10-15 minutes, or until lentils and carrots are tender.

Make a slurry of flour and water and add a small amount of it to the lentil mixture. Bring to a boil and allow to thicken. Add more of the flour mixture, if needed, to get the desired consistency. (The lentils will thicken a bit more upon standing.) Stir in peas and heat through. Season with salt and pepper to taste.

Scoop individual portions of lentil filling into small dishes and top with mashed potatoes.

We just had your yummy beans and rice for dinner and loved it. I'd like to try this lentil pie but we live in the UK and can't get the mushroom seasoning. Any ideas for substitions for this?

Hi Renee, Nice to hear you enjoyed the recipe. smilies/smiley.gif For the lentils, I add the mushroom seasoning to add some depth of flavor. Since one of the main ingredients in the mushroom seasoning is nutritional yeast extract, I'm thinking a touch of Marmite would be a good substitute. You could also try a bit of miso, Bragg Liquid Aminos or soy sauce, but just a little. If you're not sure if the substitution would work well, I would remove some of the lentil filling from the pan and experiment in a small bowlful before adding the substitute to the entire pot just to test things out. You might even like using a good mushroom broth instead of veggie broth. Let me know how it goes for you.

Hi Cassie,

Hope you had a great weekend. I've made the sauce for your olives, capers and roasted tomato pasta tonight and we are going to have it for lunch or dinner tommorow. Sauce tastes great so far! I was hoping you could let me know if you think this recipe would work with puy lentils. I have some in the larder that I'd like to use up. What do you think? I also am having trouble tracking down the spice savory--think I could skip it or substitute it? I'd be grateful for your expert opinion!

Hi Renee, you can try using Puy lentils. As for the savory, you could leave it out, no problem, and add a little extra thyme if you'd like. If you wanted to include something else instead for a different flavor, I would consider a bay leaf, a pinch of sage, or some rosemary. I think any of them could work nicely. Let me know what you end up doing and how it turns out! Now I have a question for you... what is a larder?! smilies/smiley.gif

Hi Cassie,

I'm going to make this for dinner tonight with the puy lentils and perhaps a bay leaf as you suggested. Sorry for the Brit speak! I think the Canadian translation for larder would be the pantry or the cupboard where one keeps one's dry ingredients! I made the pasta last night but ruined it by going overboard on the chili flakes which burned our mouths off! Oh well, live and learn. I guess these mistakes make us better cooks but I wasn't too thrilled about it. Hope you are having a great week. Take care and I'll let you know how the lentil pie goes.

We do like spicy food but don't enjoy it so much when it hurts. smilies/wink.gif I'm sorry your dinner turned out too hot!

Sainsbury's does the mushroom flavour in their fancy section not sure what they call it? its in with the decent miso paprika powder normally next to the free from range

i find that if you add soya mince and worchesteshire sauce it makes this dish really yummie dish. you can also add baked beans to the dish for a tomatoe taste..
