Mango-Chili Vinaigrette I didn't write out proportions as I was making this, but as with any salad dressing, you can taste as you go along and make adjustments to suit your taste. 1/2 mango, peeled and chopped 1 small hot chili pepper, seeded juice of half a lime splash of apple cider vinegar small handful of cilantro, roughly chopped salt sunflower oil Whiz all ingredients, except cilantro, together in a mini food processor. Stir in cilantro. Adjust seasoning, if necessary. Recipe: Better Than Bacon from VegCooking.com. I used 350g of extra firm tofu, reduced the amount of soy sauce to 5-6 tablespoons and used the full amount of everything else. A Y-peeler works great for slicing the tofu into very thin strips.
