I've run out of time to cook and blog this week so that's all for now. I'll be back some time next week with a new meal plan. In the meantime, I'm off on a getaway with my husband to celebrate our 12th year wedding anniversary. I hope you all have a great weekend! Tamarind, Orange and Mint Dressing Adapted from a Bobby Flay recipe for Tamarind Mint Dressing. 1 1/2-2 teaspoons tamarind concentrate, to taste juice of 1 blood orange (small to medium sized) 2 teaspoons lemon juice 1/2 teaspoon Dijon mustard 1 tablespoon olive oil fresh or dried mint Whisk all ingredients together. Adjust flavors if needed. Yields about 1/4 cup of dressing. More recipes containing tamarind - not all are vegan but could easily be adapted by substituting with vegan ingredients:

| Yum! I bought some blood oranges today and wondered if I could incorporate them into a recipe (though they are SO so good on their own). The dressing sounds awesome. I think I'll try it! Thanks! |

Hi Cassie, I hope you have a wonderful time away! I hope you tell us a little about where you went, when you return. Our family was lucky to travel to Panama and Costa Rica 2 weeks ago - it was amazing. My kids enjoyed tasting the tropical fruits there :-) xo m |
Thanks, Michelle! Our trip wasn't as exotic as yours - just a little getaway off the beaten path and not too far from home. Sounds like the kids had a great time down there, and I'm sure you did as well! |
