Bulgur Salad with Grilled Veggies and Tamarind-Mint Dressing

Bulgur Salad withTamarind-Mint Dressing - Click Image for Larger ViewThis is one my husband's favorite salads and like most salads, doesn't really require a recipe. Take prepared bulgur and mix in chopped, grilled veggies (I used fennel, bell pepper and red onion) and a handful of chopped parsley, pile it over spinach leaves and drizzle with dressing. Any dressing you like will do. I usually go for an orange and cumin vinaigrette but came across this wonderful sounding tamarind-mint dressing from Bobby Flay and had to give it a try. Great combination! You'll find my variation below along with a few other delicious-looking tamarind recipes that are on my must-try list.

I've run out of time to cook and blog this week so that's all for now. I'll be back some time next week with a new meal plan. In the meantime, I'm off on a getaway with my husband to celebrate our 12th year wedding anniversary. I hope you all have a great weekend!

Tamarind, Orange and Mint Dressing

Adapted from a Bobby Flay recipe for Tamarind Mint Dressing.

1 1/2-2 teaspoons tamarind concentrate, to taste

juice of 1 blood orange (small to medium sized)

2 teaspoons lemon juice

1/2 teaspoon Dijon mustard

1 tablespoon olive oil

fresh or dried mint

Whisk all ingredients together. Adjust flavors if needed.

Yields about 1/4 cup of dressing.
