Balsamic Marinated Beets 5 beets, about 2-2.5 inches in diameter 1/4-1/3 cup balsamic vinegar Boil whole beets in water until tender. Peel, slice, and place in a rimmed dish. Pour vinegar over top. Allow to marinade a couple of hours in the fridge - preferably overnight. I like to mix them around once or twice while they're marinating - and carefully too, and never while wearing my best clothes! Comments (7)

| I bake my beets rather than boiling them. I do this in their skins and then scrape the skin off. I bet this recipe would be delicious with the baked beets too... |
