No-Cook Coconut Date Balls

No-Cook Coconut Date Balls

This coconut-date ball recipe is a variation of Lucy's Date and Nut Balls from her site, Nourish Me. I used fresh dates I had, which, when chopped up, turned into a moist paste-like consistency. So I skipped the cooking in orange juice that her recipe called for and made a couple of other minor changes, including the addition of coconut, just to try it out. Other than that, it's all Lucy's!

 

No-Cook Coconut Date Balls

A variation of Lucy's Date and Nut Ball recipe from her site, Nourish Me.

1/2 cup minced moist, fresh Medjool dates

2 tablespoons orange juice

1/4 cup equal mix of raw sunflower and flax seeds ground up in coffee grinder (measured before grinding)

1/4 cup almond meal (fyi: 1/4c whole almonds yields approx 3/4c ground)

pinch of cinnamon

unsweetened coconut, as much as needed for coating the balls

Add all ingredients except coconut to a mixing bowl and mix well. To shape each coconut-date-ball, take a small spoonful of the date mixture in your hand along with a small palmful of shredded coconut and roll into a ball. Repeat process until all of the date mixture is used.

Yields about one dozen 1" balls.

Lucy, those dates... they are really wonderful and I have to laugh about them because every fall/winter I end up with so many it's just ridiculous. The markets display them more prominently between Thanksgiving and Christmas and I can never resist buying a 1 kg tub, but then I forget I already bought one that I hadn't finished yet... and then I do it again! Fortunately they can keep very well for quite a few months. I'm making another batch of the date balls this week, too, so will make another dent in the stash. This time I will give it a try with orange zest!
