What's on my plate: sweet and spicy beer baked beans, rye crispbread with avocado, cucumber and tomato and some fresh strawberries. The baked beans taste great hot or cold and they're even tastier after the flavors have had a chance to mingle a while. I'm thinking they'd probably freeze well too, but haven't tried that myself as we've already polished off the entire batch. Do any of you ever freeze baked beans? Stove-Top Sweet and Spicy Beer "Baked" Beans For ingredients that list a range of quantities (molasses, sugar, chipotle, vinegar) start with less and add more if needed - though you might want to keep in mind the flavors do concentrate some as the mixture reduces down while cooking. I included smoked paprika in the recipe, but I'm not sure it contributed much, so skip it if you'd like. 1-2 teaspoons oil, for sauteing 1 onion, diced 1 sweet bell pepper, diced 2 garlic gloves, minced 4 cups cooked navy beans, drained 1 bottle (341ml) of your favorite beer 3-4 tablespoons cider vinegar 3-4 tablespoons light molasses 3-4 tablespoons sucanat or brown sugar 3 tablespoons tomato paste 1 heaping tablespoon mustard, any kind you like 1/2-1 chipotle pepper in adobo sauce, minced 1 teaspoon smoked paprika 1/2 teaspoon allspice Heat oil in a pot and saute onions, bell pepper and garlic until softened. Add all remaining ingredients and simmer uncovered for about 30 minutes, or until thickened to desired consistency. Season with salt and pepper to taste. Makes 4 1/2-5 cups.

| This looks really, really good Cassie. And so easy. As you know, I do like a one-pot warmer! A question about the chipotles in adobo. There's now way I'm going to get that here in Aus. However I can find dried chipotles. So I'm thinking of substituting one dried chipotle, some fresh chilli and garlic, and a bit of tomato passata. Do you think that would work??? |
| these look great - I have a baked bean recipe with rum that I like but I think I prefer the idea of beer. And I have chipotle I need to use up! I can't remember if I have frozen baked beans but I have frozen enough other bean dishes to think they should freeze just fine. |

The dried pepper sounds like a perfect sub to me and a bit like your own version of chipotle en adobo with the other ingredients. I don't know how much heat those dried peppers pack compared to the canned ones I use, so I might be tempted to start with less and hold off on the fresh pepper unless you're sure it won't be too hot for you. I came across your site the other day and felt like I'd found one of those hidden treasures on the internet. Your recipes look delicious and accessible and the photos really make this something special! The baked beans spoke to me so my husband stopped by the store to get ingredients and we made them the same night. They were divine! We added some of my favorite vegetarian hot dogs and made 'franks and beans'. We had dried chipotles at home, so we threw three of them in, which certainly added some kick. There's enough left that we probably good freeze some, but I'm guessing my husband is going to polish them off instead. Thanks for maintaining such a wonderful site. I'm sure we're going to try many more of your recipes. |

Beery beans sound great Cassie! I must remember to look out for chipotles in adobo or just chipotles - they don't seem to be very readily available in England but I'm sure somewhere must have them I freeze my favourite homemade baked beans recipe and nothing untowards happens to them |

| I tried this recipe and it was great! It was a little sweet for me though, so I ended up adding a 400g tin of tomatoes to tone it down. I'll definitely make this one again, although I'll probably reduce the overall sugar by half. The beer through the beans was delicious. Thanks for sharing! |
| Hi Beth, thanks for note! I'm glad you liked the recipe and yes, do back off on the sugar or molasses if you find it too sweet. Good thinking to add the tomatoes and I wonder if your version was more like chili that way. It sounds great! |
