Everyday Basics: Salad and Apple Cider Vinaigrette

This is an ideal example of how I prefer my salad dressings: light, tangy and slightly sweet. I love this dressing drizzled over romaine lettuce with chunks of sweet red apple, thin slices of red onion and a sprinkling of pecans halves. It's a favorite salad of mine and an easy and tasty way to incorporate some more veggies with your meal.

Apple Cider Vinaigrette

2 tablespoons cider vinegar
2 tablespoons olive or flax oil, or combination of both
2-3 teaspoons Dijon mustard
2-3 tablespoons unsweetened apple cider

1 teaspoon agave nectar
pinch or two of allspice or cinnamon

Whisk ingredients together and adjust flavors if needed. Makes about 1/2 cup of dressing. Keep leftover dressing in a sealed container in the refrigerator.
