This is a great dish to serve for brunch and can be scaled up for more servings. Baked Oatmeal with Cranberries and Walnuts This recipe is loosely based on the Baked Oatmeal recipe from Cooking Light. 1 3/4 cups unsweetened almond milk (or other non-dairy milk) 1/2 cup unsweetened applesauce 1 tablespoon ground flax seed 2 cups rolled oats (not quick cooking) 3 tablespoons brown sugar 1/3 cup dried cranberries 1/4 cup chopped walnuts 1 1/2 teaspoons baking powder 1 teaspoon cinnamon Preheat oven to 375F. Lightly coat a 7"x9" or 8"x8" baking pan with non-stick spray. Combine the milk, applesauce and flax seed and set aside. In a separate bowl, combine all remaining ingredients, stir in wet mix then pour into prepared pan. Bake for 35-40 minutes. Serve warm. This makes enough for about 6 servings, or 4 for heartier appetites. Comments (17)

Thanks Sanja and Michelle! We've been on a baked oatmeal kick ever since I posted this, making many variations, and having it in the fridge to reheat when we want. Very nice to have a hot breakfast without having to cook it first thing in the morning! |

Thanks Tenesha! For anyone that might have some (soy)nog to use up, try it in the recipe in place of the almond milk. Quite tasty - and the flavor reminded me a bit of pumpkin pie. Thinking of trying a pumpkin variation next with raisins and spices (and pumpkin in oatmeal is delicious). I could also see a banana variation working well, using mashed overripe banana to substitute for the applesauce. |

| this recipe is easy to make and delicious to eat! My six year old daughter helped me make it and it was simple. My husband, who is so so pickie couldn't believe how good this was. Definelty a recipe I will make over and over again. |

I finally got around to trying this recipe and wanted to tell you the kids all LOVED it. (They also like to pour milk over top! ) I will have to double the batch next time so there are leftovers for the next morning! |
| This is my favorite breakfast lately! For the last month I have been making a pan on the weekend and eating leftovers before work. I tried the leftovers cold last week, instead of reheating, and loved it even more that way, which is perfect on the hot mornings we have been waking up to.
