Tempeh and Bell Pepper FajitasOn Sunday night I made one of our favorite tempeh dishes for dinner: Tempeh and Bell Pepper Fajitas. I often make fresh salsa to serve with them but this time it was plain chopped tomotoes and avocado and I added a dash of hot sauce to my fajita.

A little note: I usually pan-fry the marinated tempeh but you can broil if you prefer. Simply place the strips on an oiled baking sheet and broil about ten minutes on one side, flip the strips over, then broil another 5 minutes or so - and keep a close a eye on things to avoid burning!
