We had Cold Beet and Cucumber soup and veggie sandwiches for this meal. The soup was made a couple of weeks back and leftovers were frozen. The sandwiches included cucumber, bell pepper, pickled peppers, tomato, radish sprouts, avocado and onion. Also on the side was vanilla soy yogurt with blueberries that we ended up eating later in the evening. Recipe: Cold Beet and Cucumber Soup
