Chipotle Baked Macaroni with Broccoli and Tomatoes

Chipotle Baked Macaroni with Broccoli and TomatoesI used a vegan recipe called Cashew Cheddar Cheese from 101 Cookbooks for the velvety sauce in this yummy baked macaroni. I added chipotle peppers to the cashew cheese sauce for a little kick and mixed some of it into brown rice macaroni that I baked with broccoli, tomatoes and a bread crumb topping.

I made half the recipe with the following changes:


  • Added dry mustard powder (have also used a small dollop of Dijon mustard other times which is also good)
  • Used half the amount of agar, for a less firm cashew cheese sauce
  • Added a chipotle pepper in adobo sauce

This is what I did to prepare my baked macaroni:

  • I mixed brown rice macaroni (cooked al dente) with just enough of the sauce to coat the pasta.
  • Transferred mixture to individual gratin dishes and tucked parcooked broccoli spears and raw, halved cherry tomatoes into each dish.
  • Topped with fresh bread crumbs that were lightly coated with a bit of melted Earth Balance margarine.
  • Baked uncovered at 350F for about 15-20 minutes, until heated through and browned on top.

I love trying any version of macaroni and cheese and this one looks and sounds very tasty! I was just thinking yesterday how I need to add broccoli to more things and this is a perfect dish to add it to.

It's so nice to see you!! To answer your question... No, this doesn't taste like cheese at all and I actually hate to call it "cheese" except in reference to the original recipe. I can't really describe the flavor. I can taste the nutritional yeast in it and that's a good thing to me as I love the stuff. It (the sauce) is great in it's own way and has a wonderfully smooth texture. The chipotle adds a nice smoky kick, too. Give it a try and see how you like it!

Oh, and I have found that I can use even less agar than I did the first time I made it here (about a 1/4 the amount) but it may vary for others depending on the final consistency you're after.
