Banana-Date-Walnut Smoothie for 1 serving 3/4 cup unsweetened soy milk 1 small banana or 1/2 larger one, peeled 3-4 soft, fresh Medjool dates, pitted palmful of walnut halves small handful of crushed ice, if desired Blend all ingredients to a smooth consistency. Serve right away.
Maple-Cinnamon Toast The other part of my breakfast was toasted whole grain bread with maple butter and a sprinkling of cinnamon. The maple butter I used is a store-bought product. It is made of 100% maple syrup and has a creamy, spreadable consistency similar to smooth peanut butter. I spread about a teaspoon of it over my toast then spinkled it with a bit of cinnamon for even more deliciousness. Comments (4)
