Overnight Oats with Pumpkin, Raisins and WalnutsFor this breakfast, I slow-cooked 1/4 cup toasted steel cut oats in 1 cup of boiling water overnight using the Thermos method I had read about in an Alive publication. In the morning, I transferred the cooked oatmeal to a saucepan along with a 1/4 cup of leftover pumpkin puree, a handful of raisins, a pinch of cinnamon, and tiny pinch each of nutmeg and cloves. I heated the mixture through then stirred in a small handful of walnuts and drizzled a spoonful of maple syrup over top. Yum!

Cassie, never heard of the thermos method - that's brilliant. Thanks for the tip.

I also like your idea of using pumpkin puree + spices, raisins, maple syrup - yum. And you've managed to do that rare thing of fitting a vegetable serving in with breakfast.

I had never heard of the thermos method either--what a great idea! I have used the crock pot to make oatmeal before, but then I end up making a ton and don't always want leftovers. Thanks for sharing the method! I really love cloves...I think they add so much to the flavor of the dish. Your breakfast sounds great!

Cassie, even better. I'm so looking forward to finding out how you go with other grains. I think I shall be pinching this idea for my reluctant breakfast clients. The ones who say they "don't have time" to prepare a healthy breakfast in the morning. No excuses now!

Michelle, I use a stainless steel Thermos brand.

Kathryn, I'll be sure to post the results of using the Thermos to cook other grains in. And I think it's great you'll be sharing this method with your reluctant breakfast clients!

How great will this method be for traveling, camping and hiking, too? I'm definitely going to pack an extra Thermos for making hot cereal in when we get out camping again next summer/fall.
