Tempeh Sloppy Joe Wrap

For the last lunch of my 7 days of breakfast and lunch posts: Tempeh Sloppy Joe Wrap with Apple and Cabbage Slaw and a simple spinach salad. The recipe for the Tempeh Sloppy Joe Wraps was posted back in April and the recipe I'm including here is just slightly different. The Apple Cabbage Slaw was included in the Edamame Dumpling post.

Tempeh Sloppy Joes

I like to serve the sloppy joe filling with slaw and wrap it all up in a flour tortilla. It's less sloppy but still sloppy enough that you may not want to wear your best white shirt while eating. wink

2-3 teaspoons olive oil

8-ounce package tempeh

1 green bell pepper, chopped

1/2 large onion, chopped

3 cloves garlic, minced

1-2 tablespoons chili powder

1 chipotle pepper in adobo sauce, minced

1/2 cup crushed canned tomatoes

4-5 tablespoons ketchup (I eyeballed it)

1 tablespoon sucanat (only if needed)

1 cup beer

1/2 cup water, more if needed

1 tablespoon vegan Worcestershire

salt and pepper, to taste

Heat oil in a large skillet over medium heat. Saute tempeh, bell pepper and onion about 10 minutes, until lightly browned. Add garlic and chili powder. Cook 2-3 minutes. Add remaining ingredients. Cover and simmer for 20 minutes, adding a little extra water if needed. Remove lid and allow mixture to cook another 5 minutes or so to thicken. Season with salt and pepper to taste.

Assemble sloppy joes as desired and enjoy!

Yields 4-5 servings.

thank you! we made this yesterday... it was delicious! we took some liberties with the chili to make them extra spicy. and try them on small corn tortillas to make the whole event extra sloppy =)
