| My Husband's Favorite Breakfast Bar - without amaranth |

Breakfast and Snack Bar - my husband's favorite Date Mixture: 1/2 cup diced dried dates 1/2 cup water
Flax Mixture: 5 teaspoons freshly ground flax seeds 1/2 cup water
Dry Ingredients: 3/4 cup quick oats 1/4 cup whole spelt flour (try a different flour if you'd like) 1/4 teaspoon cinnamon, or more if desired 1/3 cup chopped raw almonds 1/3 cup raw sunflower seeds 1/3 cup dried cherries, chopped if they're large 1/3 cup diced dried apricots 1/3 cup diced dried pears 1/3 cup diced dried apples Lightly coat a 9"x9" baking pan with cooking spray or oil and set aside. Prepare Date Mixture: Add 1/2 cup water and diced dates to a small saucepan. Bring to a gentle simmer and cook about 5 minutes, stirring occasionally, until dates are soft. (Mixture will be thick.) Allow to cool. Prepare Flax Mixture: Combine 1/2 cup water and 5 teaspoons ground flax. Set aside for five minutes to thicken then stir. Mix all dry ingredients together in a mixing bowl. Add flax mixture to date puree, stir well, and pour into dry ingredients. Mix to combine and press into baking pan. Bake at 350 F for approximately 15 minutes. Allow to cool completely before cutting into bars. Yields 15 bars. Other variations of this recipes:

Thanks so much for these recipes! They look fabulous! Quick question--how long will they keep? I was thinking of maybe giving them as holiday gifts...do you think they would last a week or so well wrapped in aluminum foil? Can't wait to try them! Courtney |
Thanks Courtney! As for storage, hmmm... I can't answer that as I honestly don't know. I keep whatever we'll eat out for the day and the rest is refrigerated or frozen as they have a somewhat high moisture content (think fruitcake as opposed to a cookie). Sorry I can't be of more help! I hope you enjoy them. |

I saw the other post for these and was bummed because I didn't get any amaranth but had everything else!!!! Thanks for posting this one with the quick oats and the spelt. I have to drive my husband to work at 6am and my kids are always starving. This is going to be a great way to give them a snack for the drive and it still is really healthy!! Thanks |

Thanks, Cassie--it is great to know that they can be frozen...I think that may do it! If I make a big batch, freeze them, and then give them out once they are thawed, I think that should work. Can't wait to try them today! Courtney |

| It's me again to report back. Today I made the amaranth flour version and, very unsurprisingly, they came out just great! I didn't find amaranth flour and I didn't dare to put the amaranth grains into my little food processor. So I used amaranth pops (it's like popcorn) and ground it. Worked well. And they taste so good! |

Hi Cassie, I made these at the end of last week. I used tahini instead of the flax mixture (given the tahini theme I've been having recently). Thanks for this recipe - they taste great, are a lovely mixture of protein, low GI carbohydrates, good fabts and fibre. Plus a bar keeps me going most of the morning. Thank - I shall be making these again. |
| I made these yesterday... and YUM YUM YUM! I did a mix of pumpkin seeds, sunflower seeds, and walnuts for the nuts. I also did cranberries, apricots, and raisins for the dried fruit... I kept the same portion amounts. This recipe is so versatile - you can really use any nuts/seeds or dried fruit that you want! Great recipe Cassie! |

These sound really great, but is there something that can be substituted for the flax? I'd love to find out and possibly try them. |
| Hello Crystal, I haven't tried substituting anything else for the flax but you could leave it out and just include the water. I prefer to keep the flax in as I find the bars are sturdier when it is included, but they do hold up fine without. Please note that I have only tested a variation without flax when I used quick oats, so it may or may not work as well with substitutions in addition to omitting the flax. Thanks for your question! |

Dear Writer, What do you mean by "flax" in this recipe? In NZ we have a flax plant that is used for weaving but I don't think it's edible. Or do you mean "flax seeds", which I understand are also known as linseeds? Thank you. |

Hello Amy, you are correct about the flax seeds in the recipe. I have edited the ingredients to now say "flax seed" whereas before it said "flax". As far as linseeds go, I'm afraid I don't know if they are the same thing. I buy my flax seeds at a health food store, if that helps?
