Spinach, Roasted Beets, Chickpeas and Tahini DressingLast night I roasted 2.5kg of baby beets not knowing quite what I was going to do with them at the time. I've decided to use most of the beets for Coconut Beet Soup that we'll have for dinner tomorrow night. Today I used some of them for a lunch salad of spinach, roasted beets, chickpeas, chopped red onion and Kathryn's absolutely delicious tahini dressing. So simple yet so flavorful. I think I have a new favorite salad dressing.

Celine, I do hope you'll try Kathryn's recipe. I love simple tahini dressing with just lemon juice, tahini and a bit of water to thin it out, but her version with the mustard and shoyu takes it over the top for me. Could hardly get enough of it. smilies/smiley.gif
