| Lentil, Radish and Orange Salad with Spinach |

Ingredients for Salad: baby spinach leaves sliced radishes oranges, peeled and sectioned cooked brown or green lentils, drained Balsamic-Orange Dressing zest and juice of one orange 1 tablespoon balsamic vinegar 3 tablespoons extra virgin olive oil 1 tablespoon whole grain Dijon mustard salt and pepper Whisk all ingredients together. Add salt and pepper to taste.

I made this last time you posted it and it was great with the puy lentils that I had left over. We did the noodle salad last night and that is one I will be making again because it was so good. Might double the dressing recipe though because the dressing was particularly yummy, I couldn't get enough of it! |
