Spicy Sesame Peanut Noodles with Vegetables 6 ounces dry soba/buckwheat noodles 6 ounces green beans, trimmed and chopped 2 medium carrots, shredded 2 scallions, chopped small handful of cilantro, chopped (approximately 1/4 cup) 1/4 cup chopped peanuts
For Dressing: 1 tablespoon genmai/brown rice miso 1 tablespoon toasted sesame oil 2 tablespoons lime juice 1 tablespoon brown rice syrup 1 serrano pepper, seeded and finely minced (vary the amount according your heat tolerance) 1 clove of garlic, finely minced Whisk together all ingredients for the dressing. Set aside. Bring a large pot of water to boil. Add soba noodles and set timer for cooking time specified on package instructions. Add chopped green beans to the pot about 3-4 minutes before noodles are finished cooking. Rinse noodles and green beans under cold water to stop the cooking. Drain well and transfer to a mixing bowl. Add carrots, scallions, cilantro and peanuts to the noodle mixture. Pour dressing over top and mix to combine. Serve chilled or at room temperature. Serves 3.
