Red Lentil and Tomato SoupFifteen minutes was all the time I needed to put together this simple, hearty meal of Red Lentil and Tomato Soup with a slice of whole-grain bakery bread and a plate of steamed organic broccoli. The soup is convenient enough to prepare that I've even made it in the morning to pack up in a Thermos for a nice hot lunch later in the day.

Simple Red Lentil and Tomato Soup

For 2-3 servings. My recipe calls for fresh tomato, but when it isn't available, I substitute with a couple of unsalted, canned organic tomatoes. As with most soups, exact measurements are not required.

3 cups veggie broth, plus extra if needed (any veggie broth you like will do)

1/2-3/4 cup split red lentils, washed

1/4 teaspoon ground cumin

1/2 chipotle pepper in adobo sauce, minced

1/2 cup diced onion
1-2 garlic cloves, minced

1 large tomato, chopped

Add all ingredients to a pot. Bring to a boil then reduce heat to simmer. Cover and cook, stirring occasionally, until lentils are very tender. Add extra broth, if needed, to thin soup to desired consistency. Season with salt and pepper to taste.

I didn't have a tomato for the red lentil soup, so on the fly I substituted salsa. That was the only substitution I made.

Again I can not compliment you enough on this wonderful website.

Gina, great thinking with the salsa substitute for tomatoes in the red lentil soup!! I like that and it sounds wonderful. It's an absolutely perfect use of extra bottled or fresh salsa too, which I will be keeping in mind. Thanks for sharing your tip! And I appreciate the kind words - it means a lot to me. - Cassie
