Cauliflower and Radish Salad

Cauliflower and Radish SaladThis is one of my favorite new ways to eat cauliflower and radishes, neither of which I was previously a fan of until just last year – radishes in particular!

I tend to go light on my salad dressings and this recipe includes just enough to coat the veggies, so make extra if you prefer a little more.

Cauliflower and Radish Salad

Salad:

3 cups steamed cauliflower florets, cold

1 bunch of small radishes, sliced

1 large stalk of celery, sliced

2 scallions, chopped

 

Dressing:

1 tablespoon Vegenaise

1 teaspoon stone ground mustard or grainy Dijon

2 teaspoons rice vinegar

1 teaspoon agave nectar (or to taste)

Combine ingredients for dressing in a mixing bowl. Adjust flavors if needed and season with salt and pepper to taste. Add all of the salad ingredients to the bowl and toss well.

Note: Radishes may soften if left sitting in the salad so I find it's best served right away. If you need to make the salad in advance, you can keep the sliced radishes separate and mix them in right before serving.

Yields 3 servings.

I made the cauliflower salad this weekend. Very good. I also made your red lentil soup recipe with the tomato and chilipolte sauce. Excellant and so simple. I was worried about it when making it, and I had to do a few substitutions, but I was amazed at how flavorful and good it was! Love it. Thanks, for an excellant web site.

I didn't have a tomato for the red lentil soup, so on the fly I substituted salsa. That was the only substitution I made.
