These all looked great Cassie, especially the Taco salad.

I really need to take a leaf out of your book - I've got into the habit of food shopping every day rather than planning ahead and it's working out both time consuming and expensive. Must do better next week :-)

Planning ahead can really help save time and money - at least it does for me!
I generally shop before planning, however, as I never really know what I'll find at the market, then plan meals with what's on hand. I am shopping twice a week now, but once summer rolls around, I'll likely be back to once a week as I'll also have some of my own home-grown produce available.

If you give the planning a try, I'd love to hear how it goes for you. I hope you have a beautiful week!

The taco salad and marinated beets were FANtastic.

I love beets and the idea that I could make my own pickled beets has made me very happy. I've been eating them sparingly for a week. YUMMY!

As for the taco salad, I made it for a friend for Sunday lunch and was a hero. It was simple and quick to make and made me look like a cooking Goddess smilies/smiley.gif
