I won't be cooking our meal on Tuesday. I will, however, be making a rhubarb dessert that I'll post on the blog. So for the dinner menu, I've included four meals for this week instead of the usual five. Here's what we're having: Better Than Bacon BLTs with Mango Mayonnaise - I was inspired by a recipe I saw on Vegetarian Times that used silken tofu, mango and spices to make a yummy sounding mango spread. I'm using Vegenaise instead of tofu to make a mango mayo. More on that after our meal! Black Soybean and Veggie "Sushi" Wraps - Eden Black Soybeans were on sale this weekend so I bought a few cans. I've used them before like any other bean, but wanted to try something a bit different. I found this interesting sounding recipe from Eden Foods and thought I'd give it a try. Spaghetti with Artichoke Tapenade, Cauliflower and Almonds - Again, working with what was on sale this week. This should also be a super quick and easy meal to put together. Lemony Salad Greens with Spiced Chickpeas and Grilled Red Onions - As usual, we're having a salad meal on Friday night. I'm cooking dried beans and will make plenty to freeze and have on hand for future meals. Comments (0)
