Meal Plan for the Week - though not exactly planned

Dinners this week have been very casual and easy, which is pretty much always the case around here. I didn't really plan, however. I basically just kept in mind what ought to be used up first, as inspiration was running a little low at the beginning of the week.

Many of you have told me how useful you find it to see my weekly dinner plans and while this wasn't all planned in advance, perhaps it'll offer a few ideas when putting together your own meals.

Our meals so far this week and still to come:

  • Pasta with Olives and Roasted TomatoesPasta and Salad - I roasted cherry tomatoes which my husband tossed with kamut pasta, olives, garlic and herbs. He also made us a spinach salad with strawberries, balsamic vinegar and nuts. A lovely Monday night meal.
  • Fajitas - Tempeh and bell pepper fajitas are a frequent go-to meal for us when I have peppers on hand. And this week I had a lot of them. It was a delicious meal finished with a bowl of fresh fruit salad.
  • Seitan - Last night I made Celine's Crispy Baked Seitan. It's the easiest seitan I've ever made and very good, too. I bias-sliced the baked patties then lightly browned in a skillet and served with Miso-Sesame Gravy, potatoes and heaps of steamed broccoli.
  • Stir-Fry - I have quite a few veggies on hand and tonight I will whip up a little stir-fry with cashews and serve it over quinoa. A few different stir-fries have been posted in the past and I'll likely go a similar route as my sugar snap pea and tofu stir-fry.
  • Freezable Meal - I haven't decided what I'll cook tomorrow but think it's time to make a large batch of something freezable as I'm currently out of any homemade freezer meals. I'll be sure to share whatever I come up with after it's made!

It's upsetting when your freezer starts to run low isn't it? I've just stocked up with a tofu curry type recipe and a squash and chickpea stew so all is well again

Celine, we both liked it - great texture too!

Sophie, that tofu recipe sound very nice. I would love to check it out if it's online. I'm not a huge fan of tofu that has been frozen and thawed so never tried freezing a tofu dish. I haven't given up on the idea of liking it completely, however, as I suspect like many things, it would depend on the dish. I don't think I've put curry and tofu together before, but my husband has had a restaurant we sometimes go to sub tofu for chicken in one of their otherwise veg menu items. He liked it a lot and I wish I'd of tried it! The stew sounds great too. Thanks for the ideas!

I am looking to buy a couple of new essential pieces of cookware. I am willing to invest in a good tri-ply aluminm/stainless 5 qt type saute pan but was curious about whether for a stock pot you would suggest also going higher quality or whether it would be fine to go with a cheaper version? Also, what one other piece besides a good saute pan and a stock pot is essential for the kind of cooking you do?

Any response would be welcomed but I am sure you are very busy.

Short answer to your first question: I personally opt for a lesser priced stock pot and opt to spend the extra money on better quality sauce pans.

As for other pieces of cookware: While not essential, my cast iron skillets are my most favorite and most used pieces of cookware. Love them!
