What's on my menu for the week...

  • Baked Bean SoupSpinach and Artichoke Spanakopita - I made the spanakopita yesterday and leftovers will be a nice, easy dinner for us tonight.
  • Baked Bean Soup - This soup was also made yesterday after spotting the recipe at Ashley's site, eat me, delicious. We had some for lunch and the rest was saved for a dinner tomorrow night. For the beans, I opted for a mix of cooked navy beans and frozen lima beans. I added minced chipotle pepper in adobo sauce and also included homemade vegetable broth I had in the freezer.   • Noodle Salad with Spicy Sesame-Orange Dressing - I often make up a batch up dressing to use throughout the week and this week it's a sesame-orange dressing made with tahini. Some of it will be used for a noodle salad with romaine lettuce and other fresh veggies. The remaining dressing will be used with lunches.
  • A meal featuring harissa - With the last meal plan I shared, it was my intention to make a freezer meal but that never happened as life got in the way. I did, however, make a harissa that I froze in small portions to use whenever I wanted. This week I'll be using some of the harissa for one of our meals and though I haven't decided exactly how just yet, it's sure to include quinoa as I love the two combined.
  • Maple Roasted Tofu with Asparagus and Rice Noodles - a meal I whipped up one day to take advantage of the beautiful spring asparagus that had finally arrived - and I'll be making it again!
