A Weekend Potluck Menu

I mentioned previously that we were having a large family gathering out at our home. And boy, was it ever a large gathering with my husband's parents, his brother's family, aunts, uncles, cousins and their children! So much fun and sooo much food!

My potluck contribution - I did a soup and a dessert and included some extras as I wanted to have them for later in the week as well. You've seen some of these recipes here before, but I don't like to experiment too much when there's a hungry group to feed and stick with what's tried and true. And it helps if the food can be made in advance...

  • Baked Bean SoupBaked Bean Soup - A big pot of it, which can be made in advance, and tastes even better the next day.
  • Sweet Potato Salad with Apple-Flax Vinaigrette - The salad was very similar to the one I made with my Tempeh Sloppy Joe Wraps last summer. I used orange-fleshed sweet potatoes, blue potatoes, red onions, corn kernels, red and green bell peppers, cilantro, salt and pepper and as much apple-flax vinaigrette as needed to thoroughly coat everything. The salad is best made in advance.
  • Cauliflower and Radish Salad - This is a nice, lighter alternative to potato salad and one of my favorite ways to eat cauliflower. For the potluck, I used a whole head of cauliflower, two bunches of radishes, 3-4 large stalks of celery, two small bunches of scallions and enough dressing to coat it all. Can be made in advance but leave the radishes out until right before serving.
  • Nutty Carob Rice Squares - We all loved these little squares and I had to have my husband make up another batch for everyone. He's been such a great help this week as I continue to hobble around on an injured foot. Must be made at least an hour in advance and refrigerated.
  • Carrot Sheet Cake with Buttercream Frosting - All vegan, of course. The recipe was based on my Spelt Carrot Muffin recipe and was quite a hit. I'll be making another one possibly for the coming long weekend and will make a point of posting the recipe for it.
  • Other foods - pickles, olives, pretzels and an assortment of beverages including tea, juice, beer and some other fizzy things. Others brought fruit platters, veggies, casserole, bread, beverages, desserts and so much more.

Lots of good food and made all the better with such great company to share it with. Smile

Sounds delish! I love your carrot spelt muffins...I bet they make a great cake too! And YUM--I had not seen your cauliflower and radish salad recipe before. I happen to have a head of cauliflower on hand too...mmmmm....
