Pita with Lima Bean Falafels, Veggies and Tahini Dressing - This was dinner last night and I made extra to have again tonight when we get home, which may be a bit late. Cold Beet and Cucumber Soup, Rye Crispbread Sandwiches - It'll be another busy day but the soup will be made in advance so I'll only need to chop up some veggies for our open-face crispbread sandwiches. Pasta with Olives and Sun-dried Tomatoes, Green Salad - This meal should take no more than 15 minutes to get on the table. Barley and Black Bean Salad, Fresh Fruit - I'm making plenty of barley and black bean salad so we'll have leftovers to get us through the weekend. Barley and black beans are already cooked and frozen so it'll be a piece of cake to put together. Tempeh Sloppy Joe Wraps with Coleslaw and Sweet Potato Salad - We have a casual get together Saturday night and I'm making sloppy joe wraps. Hopefully the wraps won't be too sloppy for everyone. They weren't a problem for us when I made them before, but we'll be eating outside to be safe. ;) I may also make a fruity dessert but I'm not sure what just yet. Grocery List - I only need to buy 7-8 things this week, but as usual, all ingredients I plan to use are included in the list. Comments (0)
