I don't know what I'll do with the rest of the rhubarb but am thinking of freezing it to deal with later. I'm also eyeing these beautiful rhubarb recipes to try:

| I'm so glad you posted this! Rhubarb has been so on my mind lately! I bought some last week intending to make a rhubarb tart but I've been procrastinating because I don't have a good recipe for vegan pastry. Can anyone help!? |

Hi Cassie, obviously I like my own rhubarb tofu recipe but rhubarb on porridge is gorgeous (such a good contrast between the creamy porridge and tart rhubarb) |

Monica, Trina at Your Vegan Mom recently mentioned she made a blueberry pie and linked to this Martha Stewart recipe. The pate brisee used in the recipe reminded me of Vegan Yum Yum's mini apple pies - which look delicious. Maybe one of those links will help? If you do make a rhubarb tart, let me know how you go about the crust. Just wish you could make one for me too, as it would be a perfect dessert for Canada Day (July 1)! Celine, wish I could send you over some as I know you'd do something really amazing with it! Courtney, there will be another round coming from the garden, and I just hope I won't be all rhubarbed out by then. Sophie, porridge and rhubarb is something I have never tried or would have thought to try! I am going to make that for us this weekend! Thanks for sharing. |
| You are lucky to have a bunch of rhubarb to play with - there are so many wonderful ways to cook with it. I tried a rhubarb chutney recently which was great and think it pairs so well with orange that your chutney sounds a great way to use some of it up. The rhubarb sauce I did with the polenta sticks is really an amazing blend of flavours and I woudl recommend that too. I have also seen a recipe for rhubarb pancakes recently that was very tempting. |
| I think I'm going to try the rhubarb tart with this recipe at Good Things Catered. It's one of the few vegan pastry recipes I've found that doesn't rely on Earth Balance "butter" (I don't really trust the ingredients in that stuff). I'll let you know how it goes! |

Rhubarb is so gorgeous. You have to go ahead and try my potato salad with rhubarb and balsamic vinegar. It is so good! I love rhubarb in crumble, pie and on it's own too |
